I love this playful dessert to end the year and your holiday parties with a smile. Fruity and sweet with just enough fizz to be the perfect dessert to have before or after a ball dropping fireworks kind of kiss.

Champagne Popsicle from Libbie Summers (Photography by Chia Chong)
New Year’s Eve Adult Popsicles (aka Champagne Popsicles)
(champagne, mango, banana)
makes 12 pops

1 cup champagne (don’t use the good stuff here…save that for a midnight kiss)
1 cup mango puree (about 2 mangoes)
2 ripe bananas
1 cup freshly squeezed orange juice
1 cup sugar
1/8 teaspoon vanilla extract
1/2 cup water
12 popsicle molds (the bomb pop kind)
Add all the ingredients into a blender and puree until smooth. Pour into popsicle molds and freeze overnight. Can be made a week in advance.
