In my free time (of which there seems to be none these days) I am the Creative Culinary Director for the uber-cool and healthy meal delivery service, Terra’s Kitchen. I’ve been with the company for a little over a year now and I often get asked how it is working for a start up. What? Anyone who works for themselves knows they are always working for a start up so there were no surprises there. I’m very proud of what we are working hard to achieve at Terra’s Kitchen, the message is close to my heart. Our goal is to bring people back to the table. To slow down for a minute and laugh with your loved ones. Tell stories about your day. Start a conversation. Leave the shopping and chopping up to us.
I got to thinking about watermelon week. And, the watermelon patch that started growing 20 yards from my grandmother’s farm house at the beginning of the summer and damn near grew into the house by the time the watermelons were ripe for picking. Watermelon season is like tomato season and cucumber season on a farm. The produce is all ripe at once and by the second week of eating the same thing over and over again, you think you may take your own life. My grandmother loved watermelon and she was a wizard at creating savory dishes with it –long before Food52 thought of it first. When I created this simple salmon dish for Terra’s Kitchen, I was thinking of my grandmother. How she would have loved the flavor and how she probably would have picked out the pistachios.
