A pear sandwich –the first dish I ever served at a fancy luncheon I hosted for fancy people…when I wasn’t so fancy. They loved it proving that simple can be fancy.
Pear Sandwich
(pears, soft herb cheese, chopped pistachios)
serves 4
Ingredients:
4 just ripe pears
6 tablespoons herbed spreadable cheese (I used Alouette Garlic and Herbs)
4 tablespoons chopped pistachios
Directions:
Slice: The pears in half, stem to stern.
Core: the centers to remove the seeds
Spread: 1 1/2 Tablespoons cheese on one half of each pears
Press: The two halves of each pear together so some of the cheese squishes out the sides
Roll: Each pear in the chopped pistachios.
Serve (slice a little sliver off the bottom of the pear to set upright in the middle of a luncheon plate or aside a lovely salad…fancy people like stuff like that.)
