I don’t know about you, but I’m up to my eyeballs in Thanksgiving leftovers. So, I decided to have some fun with them by turning them into new delicious dishes…super easy new delicious dishes! First up, Green Bean Soup. What was once a pot of delightfully overcooked green beans is now a quick lunch!
Green Bean Soup
serves 2
Ingredients:
2 cups leftover green beans with all their pork goodness juices(the ones like your grandmother used to make that are so overcooked they are heaven), hot
1 cup milk, warm
Salt and pepper
2 fried onion rings
Directions:
In a blender, add the green beans with their juices and milk. Process until smooth. Salt and pepper to taste.
To Serve: Divide warm soup between two bowls and top each with an onion ring.
