My go to Summer Salad. Raw corn, peppery radish, red onion, tomatoes and creamy avocado. Almost as beautiful as it is good.
Raw Corn and Avocado Salad
(sweet corn, radish, red onion, tomatoes, avocado, spicy lime dressing)
Serves 4-6
Ingredients:
4 ears of corn, shucked and washed
4 small radish, sliced
1 cup halved cherry tomatoes
1/2 small red onion, thinly sliced
1 avocado, seeded and chopped
2 juicy limes, juiced (you need 2-3 tablespoons of juice
1 tablespoon canola oil
1/4 cup chopped mint leaves
1/2 jalapeno finely minced
Flake sea salt
Coarsely ground black pepper
Directions:
With a corn cob standing upright/holding the top, use a sharp chef’s knife and cut down the sides of the cobs to remove the kernels. Place kernels in a large mixing bowl. Add the radish, tomatoes and red onion. Toss together.
In a small mixing bowl, stir together the lime juice, oil, mint and jalapeno.
Pour dressing over corn mixture and toss to coat. Salt and pepper to taste. Fold in the avocado pieces and serve.
